Brown Butter Chocolate Chip Cookies

We wanted to know whether resting cookie dough is worth the wait, so we baked the same dough four times at different rest lengths and tasted them side by side.

What the testing showed

Resting matters, but it plateaus. One hour is noticeably better than none; twenty-four hours is clearly better than one; seventy-two is not meaningfully better than twenty-four. The flour hydrates and the sugars break down over the first day, and after that very little changes. If you have a day, use it. If you do not, one hour still helps.

The winning method

  1. Melt the butter in a light-coloured pan over medium heat and keep cooking, swirling, 5 to 7 minutes until it foams, quiets, and the solids turn golden brown and smell nutty. Pour it into a bowl, scraping in every brown speck, and cool 15 minutes.
  2. Whisk in both sugars, then the eggs, extra yolk and vanilla, beating for a full minute until glossy.
  3. Fold in the flour, baking soda and salt until just combined, then the chocolate.
  4. Cover and refrigerate 24 hours. This is the step the testing was about.
  5. Heat the oven to 350 degrees F. Scoop 20 balls onto lined trays, leaving plenty of space, and bake 11 to 13 minutes until the edges are set and the centres still look underdone.
  6. Finish with flaky salt and cool on the tray 10 minutes — they finish setting there, and moving them early is how they break.
The bit that matters

Brown the butter properly and scrape in the solids. Those browned milk solids at the bottom of the pan are where the entire flavour difference lives, and leaving them behind turns this back into an ordinary cookie.
